A blend of Cabernet Sauvignon, Merlot and Shiraz. The grapes underwent two weeks of cold maceration after arrival at the cellar. Fermentation was conducted under controlled conditions for four weeks until dry and then racked off into small French oak barrels for ageing. The wine stayed in barrel for thirty-three months prior to bottling.
The wine shows distinct blackberry, plum and smoky coffee notes. Rich and firm on the palate, the wine shows lovely integration of fruit and wood with a firm tannic core.
The wine would be an outstanding accompaniment to red meat and cheese-based dishes.
The wine is ready to be enjoyed now but has the potential to age well beyond ten years given good cellar conditions.
